I use PhotoShop. First I use the tool that lets me 'take a sample' of the color I want to preserve, in this instance, the cat's eye color. Then, I de-saturate, or remove all color from the photograph. Then I use the color replacement tool, and just put back the sampled color on to the eyes...voila! A black and white, with a touch of color for a dramatic effect.

The cat pics with the photoshopped eyes is awesome. There are some fine B&W photogs still out there who hand color their b&w pics with incredible results. Here is just one I googled. Keefer Photography
