Thanks for sharing this Lodestar. It sounded mighty tasty so I popped it in the oven tout de suite and it didn't disappoint. I blended in a large peeled and cubed Macintosh, which I had pre-softened in the microwave .
And as long as I had the oven on, I experimented and made a second one, substituting 3/4 cup masa harina for the flour and corn oil for the butter. To this one, I added about one cup shredded cheddar cheese and some chopped jalapeño pepper. This one was good also.

Yes, it's much better with fresh apples. When the kids were still here it was handier to use the canned filling. Think you could probably use any number of fruits in the pan. Blueberries and other berries, apricots, plums.

Hee. I confess I have never run to the table with this piping hot dish pealing out, "Pannekoeken! Pannekoeken!" Those poor kids. You almost feel like you have to clean your plate after that over-the-top presentation.

The savory ones used the same batter, with flour, but had a veggie mix instead of fruit. Sadly, the veg mix included bell peppers (YUCK), so I never tried them. It should puff just fine.
Congealed sounds so unappetizing. Like the name clotted cream almost makes me gag.
And don't forget "mold." How'd you like a nice jello mold?
