Thanks for sharing this Lodestar. It sounded mighty tasty so I popped it in the oven tout de suite and it didn't disappoint. I blended in a large peeled and cubed Macintosh, which I had pre-softened in the microwave .

And as long as I had the oven on, I experimented and made a second one, substituting 3/4 cup masa harina for the flour and corn oil for the butter. To this one, I added about one cup shredded cheddar cheese and some chopped jalapeño pepper. This one was good also.

Thanks again for an easy and tasty recipe.

Oh, get thee behind me, Lodestar!
I always loved it when my aunt made Dutch babies, haven't had them in years.
But a few years ago, I followed my nose through Rochester MN, and discovered the Pannekoeken restaurant. Yummmmmmmmm.

They had savory versions, too.

Yes, it's much better with fresh apples. When the kids were still here it was handier to use the canned filling. Think you could probably use any number of fruits in the pan. Blueberries and other berries, apricots, plums.

The savory one sounds very good. Did it puff as much as the flour one?

Hee. I confess I have never run to the table with this piping hot dish pealing out, "Pannekoeken! Pannekoeken!" Those poor kids. You almost feel like you have to clean your plate after that over-the-top presentation.

I was searching online to see if these could be done in the microwave and ran into an article about authentic Dutch ones made on top of the stove. They looked like a big flat pancake.

No, not with the cheese in it.

Now this has me thinking about lekker stroopwafels. All kinds of yummy treats we can make.

The savory ones used the same batter, with flour, but had a veggie mix instead of fruit. Sadly, the veg mix included bell peppers (YUCK), so I never tried them. It should puff just fine.

And don't forget "mold." How'd you like a nice jello mold?

I see I posted the same thing twice here. Someone reminded me by giving me a reward on the first one today.

Sheesh. Some days I think I must have said everything I'm ever going to say at least once already.

At least you know it must be good when it's recommended twice!
