Most wild game meats are quite lean. I.. Haven't ever tried an Emu Burger, but.. You'd think you'd toss in something to add a little bit of fat to it. I'd think most places that do an ostrich burger.. It's not 100% ostrich. But.. i couldn't tell you for sure.

Cook both like you would venison. Slow with lots of moisture or at least wrapped in bacon if you insist on grilling. Not rally worth the trouble.

Generally pork fat. Game is too lean to grill.

Like beef. But I preferred it raw, like beef carpaccio. Seriously, that was one of the most delicious things I've ever tasted.

Remember that ostrich is classified as red meat, not poultry.

Maybe off topic but does anyone know of any restaurants in the NYC area serving either alligator or ostrich? NYC had one on the West Side Drive that folded years ago, to which my wife and I went. In Port Chester, there was an ostrich-serving restaurant that I went to with another lawyer in 2000. It's no longer there.
