Looks like a new pressure canner. Way to go.... you're doing it right.
We've had that one about 5 years. Pricey, but dang it's the cats meow. Our harvest is coming in and hunting season is coming up. Sheets about to get real, lol.

As much as I like Mountain House, this newer manufacturer is off the chain.
Freeze dried wild Maine lobster, are you kidding me?
The price on sirloin steak isn't all that bad, rehydrated it's about $20/lb. https://freezedrywholesalers.com/collections/all
One thing I like about this company is that they don't raise prices without forewarning their customers. About once every 7 years. They have just issued such a warning. On labor day the price of most of their products will increase 14%. In the meantime they are offering a 10% off coupon code: "Use the Pomo Code HeadsUp during checkout between now and Sunday night at midnight to save a little more while you can."
Nice harvests there, Threerun. I miss not being able to grow, and also preserve, my own food.
Never too old. We go out and get quakers and sky carp in the dead of winter in MT- just suck it up and do it, lol. You'd be surprised at the opportunity that's around- just gotta ask.
BTW- we just put up a pile of bingo beans (dry) and about 16 cups of kale and potato soup today. The garden is producing like mad right now. I think we'll have 60lbs of potatoes at harvest, about 30lbs of carrots and 30lbs of onions- we'll be able to make many quarts of good soups for storage. Maybe a year depending on the tomato harvest.

You can buy a freeze dryer and do the freeze drying at home. I was a bit surprised to see them for sale this week in the local farm supply store. I have not the slightest idea about how well they might work, but if they work and if you buy a lot of freeze dried food they would probably pay their own way
I have two dehydrators and they are used quite a lot. I make jerky and I dry veggies and spices. My family eats what I dry, I'm not necessarily drying for long term storage. I grow the veggies and herbs and peppers, I don't buy them.
I’ve seen them and the units are expensive. We opted not to entertain it because we have a stock of 200-300 mason jars collected over the years and most of the other equipment/tools I inherited. We did buy a pressure canner- a good one.
Since we eat and rotate what we put up it just didn’t make a whole lot of sense. Oh we also have a dehydrator, it was a Christmas gift 30 years ago. We do a lot of camping and hiking so that’s been pretty valuable. But again we cycle thru it.
A few weeks ago I jerked 10lbs of my ‘Sky Carp’ jerky (Wild geese) and 20lbs of either/or mule deer, whitetail or pronghorn. That’s called my ‘WTF jerky’. Dehydrator got a workout.
