I have read that there are no SIMs at the airport.

I have not found anyone that has verified the availabilty of SIM cards at the Munich airport - only person I found that had been there recently said that there were NO SIM cards available there at all.

Most Apple devices can use e-sim. Much simpler in various locales.
I will be staying in three areas. Oberammergau is just the first city we are in - that's why I am looking for Germany coverage.

Have you thought of using an eSIM? It looks like the iPhone SE will support it. check YouTube for eSIM options for the places you plan to visit.

Buying a SIM Card is fast at the airports in Berlin or Munich because such locations offer various possibilities. People will come across shops, but these won't be limited to the airport; they'll undoubtedly see some mobile shops where they can get Prepaid SIM cards from Munich airport.Oct 5, 2022
Often, you can buy them at convenience stores (Airport, malls, travel stops...)

eSIM would be my go-to (if I had an Apple device)

All German carriers offer eSIM.

They sell SIMs in supermarkets in Germany. Oberammergau has a Lidl, Netto and Edeka. All three of those supermarket chains have their own cell service for which they sell SIMs (it's just a rebranded version of one of the major operators like T-Mobile, O2 or Vodafone).

Yes - I am getting an eSIM, and I have Google voice set up. I'm good to go.
