You may be able to purchase a sim and have it waiting for you online. You may be able to find the available vendors on the airport's site or use a site like Klook to buy a sim at your arrival airport.
Also even though the city you are going to may be considered remote, there will likely be a mobile phone provider nearby.
I have read that there are no SIMs at the airport.
Get one at the airport upon arrival, it only takes a few minutes for them to set it up with a local carrier for you. Otherwise check out a mall/shopping center near where you land for a telco shop to do it.
I have not found anyone that has verified the availabilty of SIM cards at the Munich airport - only person I found that had been there recently said that there were NO SIM cards available there at all.

I will be staying in three areas. Oberammergau is just the first city we are in - that's why I am looking for Germany coverage.
They sell SIMs in supermarkets in Germany. Oberammergau has a Lidl, Netto and Edeka. All three of those supermarket chains have their own cell service for which they sell SIMs (it's just a rebranded version of one of the major operators like T-Mobile, O2 or Vodafone).

Have you thought of using an eSIM? It looks like the iPhone SE will support it. check YouTube for eSIM options for the places you plan to visit.
