Observation: A meat (beef) specialized processing request has not been submitted and approved before preparing food for sale. Person In Charge removed food from sale and voluntarily agreed to cease the specialty process until the process is approved.

No one was working in the meat department at the time of inspection. All equipment utilized in the processing of meat were found to be soiled with raw meat (slicers, saw, and packaging equipment). The owner arrived at the end of the inspection and stated that the person working in the meat department this morning had an emergency and needed to leave, but she was unsure what time that person left. Interior surfaces of the upright "Sears Coldspot" freezer containing raw meat and fish is soiled with blood and food residue with a build up of frost. --Exterior of chest freezer in the meat department is soiled with what appears to be blood. Exteriors of the sliding doors on the meat display case area soiled with food residue. Observed blood soiled clothe sitting on a surface in the meat department.
