Observation:There were no dates on salads and meats from Saturday event, corrected on site.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation:Kitchen dishwashing machine was out of sanitizer, a new container was added, the feed line was primed. After 3 cycles, no detectable level of sanitizer was observed. There is lime buildup on the spray arm and the interior of the machine. There was also no detectable level of sanitizer in the rinse cycle at the bar glasswashing machine - there is chemical in the dispenser but this inspector is unable to determine if the machine is actually feeding chemical through the line.
