Observed two ashtrays with cigarettes in them in kitchen and one on smoker in back room. Owner states that they take ashtrays outside with them and bring them in when done. Complaint Valid.

Out of date, working container of potato salad in prep table - removed and will not be used.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
Previously cooked and cooled meats in roasters at 9:30 am temping at 143 (Pork) 153 (Beef) at 12:15 pm. Meat was puilled and will not be used.
