PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding Previously cooked and cooled meats in roasters at 9:30 am temping at 143 (Pork) 153 (Beef) at 12:15 pm. Meat was puilled and will not be used.
