    Observation: Potatoes cooked previously covered tightly in cooler with condensation build up on lid. Lid turned to side to allow heat to escape.

    Observation: Individual open cups of ketchup at the buffet line not protected from consumer.
  • Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
    Observation: Cooked potatoes dated 10/9 found in walk in cooler. Potatoes discarded.
  • Raw animal foods separated from each other during storage, separation, holding, and display
    Observation: Raw shell eggs stored over raw fish. Raw eggs moved to lower section of the shelf.
  • Separation from food, equipment, utensils, linens, and single service
    Observation: Chafing fuel containers stored over single use items. Chafing fuel moved to lower shelf.

    Observation: Bowls without handles used to scoop foods into salad bar containers are stored in the food in the walk in cooler.

    Observation: Spatulas found in storage with chipping, cracking, and flaking. Spatulas discarded.

    Observation: Certified food protection manager was required by September 2015.

    Observation: Spray bottles containing chemicals not labeled with contents. Bottles labeled at time of inspection.

    Observation: Chafing fuel containers stored over clean dishware and prep surface. Chafing fuel containers were moved to a bottom shelf of the prep table.

    Observation: Open employee beverage over prep area in the kitchen. Open beverage was removed from the area.
  • Cooling foods are stored properly
    Observation: Foods cooling in the walk in cooler are covered tightly with lids. Lids were propped off to the side to allow heat to escape.
  • Multiuse food contact surfaces are cleanable
    Observation: Wooden spoon found with large chip missing from food contact surface. Spoon was discarded at the time of inspection.

    Observations: Observed walk-in cooler and salad bar holding salads at 45* - both units were adjusted to a cooler setting and appear to be working properly.

    Observed the cold salad bar holding at 45*, in addition to the tarter and shrimp sauce at 47*. Cold hold unit was adjusted to a lower setting for correction onsite. Keep packets of butter under refrigeration between rush times.

    Observed three hand held woven wire mesh screened strainers that show signs of ware to the point that wire fragmants are breaking loose. Taken off-line and will be replaced.
  • Food storage - preventing contamination from the premises
    Observed several bags of sugar on the floor in downstairs storage room.
  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observed raw shell eggs stored above ready to eat food in walk-in cooler - corrected while onsite.
