Food storage containers identified with common name of food Observation: Containers of ice cream mix in freezer did not have labels. All food must be labeled according to manufacturer rules. Contact company and request required labels.
Outer openings are protected Observation: Back door had light showing through. All outer openings must be protect from the entry of bugs and rodents. Suggest steel wool or door sweep.

Light intensity Observation: Install light bulb in dry storage area for adequate lighting for cleaning.
Smoke free air act Observation: Every entrance and exit to be used by employees or public must have state approved "No Smoking" sign posted. Given during inspection. Post at door.
Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing. Observation: Require a thermometer to be placed on top unit of food prep cooler.
Cleanability of floors, walls, and ceilings Observation: 1) Seal all wood at front counter with two coats of light colored paint or varnish. 2) Remove carpet and install tiling under cooler at front counter. 3) Water lines in kitchen are on the floor. Mount to wall to aid in cleaning.
