Observation: Every entrance and exit to be used by employees must have state approved "No Smoking" sign posted. Given and posted during inspection.
- Food is properly labeled
Observation: Repackaged item do not have labels. When repackaged items must be labeled with name of product, quantity, name and address of packer. Label accordingly.
- Cleanability of floors, walls, and ceilings
Observation: Non-functioning walk-in cooler has bare wood flooring. All surfaces exposed to food must be cleanable. Seal wood with 2 coats light colored paint or install a cleanable floor.
- Exterior walls and roofs provide effective protection
Observation: Light is shining through in attic crawl space and evidence of rodent droppings. Seal opening and clean accordingly.
- Food storage - preventing contamination from the premises
Observation: Large bags of products on floor in walk-in cooler. All food and food items must be stored a minimum of 6" off the floor. Move to shelving or tables.
- Sanitization of food contact surfaces - before use and after cleaning
Observation: No sanitizer available during inspection. An approved sanitizer such as chlorine or QA must be available for repackaging area. Provide sanitizer at proper concentration.
- Maintaining premises free of litter and unnecessary equipment
Observation: Upright reach-in cooler and chest freezer are not working. Attic crawl space has unused shelving. All equipment must be maintained in working order or be removed from premises. Have working or removed prior to recheck. Remove shelving.
