Observation: Ice build up in walk in freezer.
- equipment food contact surfaces and utensils clean to sight and touch.
Observation: Pizza cutter, spatula and pizza cutting board not rotated out/cleaned every 4 hours. Employee voluntarily replaced the items with new/clean and washed the previous in use items.
- Storage of clean equipment and utensils
Observation: Wet mop head being stored in mop bucket.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: No thermometer in the cold hold cooler. Person in charge voluntarily placed a thermometer in the cooler during inspection.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation: Sanitizer tested at 300ppm. Employee voluntarily diluted the sanitizer to the proper level of 200ppm.
- Eating, drinking, or using tobacco
Observation: Employee drinks and food not in designated areas.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation:Shredded pork on hot hold held at 120*F after 4 hours. Employee voluntarily discarded the product.
- Using a handwashing sink- operation and maintenance
Observation: Employee drinks and breast pump parts being stored on and in the hand washing sinks. Person in charge voluntarily removed these items out of the sinks.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Bread oven not clean to sight or touch.
