Observation:No test kit was available to test the sanitizer concentration.
- A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
Observation:There is no digital thin tipped food thermometer available.
- Using a handwashing sink- operation and maintenance
Observation: Observed ice buckets with scoops and spray bottles in the hand sink by the ice machine. Removed items to correct on site. Repeat violation.

Observation:Observed cartons of shell eggs stored above beverage containers in walk in cooler. Moved cartons to bottom shelf. Corrected on site.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation:There were no thermometers available in pizza prep cooler and mini sandwich display cooler.
