Observation: All surfaces must be clean to sight and touch. All cleaning must be completed prior to physical recheck.

Pre packagfed sanwiches are not properly labeled. Tuna salad, ham and cheese, and chicken wrap must include ingrdient list and major allergen information. Label as required.
- Miscellaneous sources of contamination
1) Bags of iceare being stored on the ground in the walk-in freezer. Food and food items must be stored a minimum of 6" off the floor. Move bags to shelving. 2) Bags of coffee grounds are opened into coffee filters and then set on top of makers for morning staff. Grounds are no longer protected from contamination. All food must be protected from chemical, biological, and physical contamination. Coffee should remain in packages until use.
- Food storage - preventing contamination from the premises
