Test kit provided and used to measure sanitizing solution concentration Observation: Quat test strips will be ordered on Friday.
Foods are cooled using appropriate methods Observation: Improperly cooling hot chicken strips in plastic bag on the counter. Strips where put on a cookie sheet and cooled in the walk in cooler. At 41 degrees they will be bagged, dated and put in prep cooler.
