    Observation: Quat sanitizer in multi-purpose spray bottle tested too high (greater than 500 ppm). Employee dumped out solution and refilled bottle with sanitizer at proper concentration.

    Observation: Cups used for scooping Parmesan cheese and pizza toppings stored in container with food product between use. Discussed using a properly handled scoop

  • Separation from food, equipment, utensils, linens, and single service
    Observation:Ice machine cleaning chemicals stored on top of the ice machine (empty on this day) along side scoops.
  • When to wash
    Observation: Food handler picked up the handset of the telephone with her gloved hand and when done talking on the phone returned to food preparation activities without disposing of the gloves and washing hands. Inspector explained the violation to the food handler and asked the food handler to wash their hands. Food handler washed hands and donned new gloves. REPEAT VIOLATION.
  • Food and water temperature measuring devices are appropriately scaled
    Observation:The external reading of the Hatco Hot Holding and Display Cabinet (in the customer self service area) located closest to the walkin cooler is not accurate and the thermometer inside this unit is and oven thermometer with a temperature range of 150 F- 600 F. The thermometer cannot provide accurate ambient air temperature of the unit if the temperature falls below 150 F.External thermometer on the unit indicated the ambient air temperature changed from 148 F to 168 F in less than a second--temperature reading was not accurate. A internal thermometer that can measure/display hot holding temperatures below 150 F must be provided inside the unit until the built in digital thermometer display is operating properly. REPEAT VIOLATION
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation:A thermometer with a small diameter probe is not available for food handlers to monitor the temperature of thin food items such as thin crust pizza and thin hamburger patties. REPEAT VIOLATION

    Observation:2 food dispensing scoops are stored on a dirty surface on top of the ice machine. REPEAT VIOLATION

    Observation:Food handler put his gloved hands in his pants pockets and did not dispose of the gloves and wash his hands afterwards.

    Observation:Ice scoops stored on a dirty surface on top of the ice machine and on a card board box. Ice scoops were taken back to the kitchen to be washed during the inspection.
  • Separation from food, equipment, utensils, linens, and single service
    Observation:Antibacterial soap and vegetation killer stored next to and above bags used for packaging edible ice. Products were moved to another location.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation:A thermometer with a small diameter probe is not available for monitoring the temperature of thin food items such as thin crust pizza and thin hamburger patties.
  • Equipment used for heating, holding, and cooling of food shall be sufficient in number and capacity to provide adequate food temperatures
    Observation:Customer self service hot holding units storing pizza, chicken, and burgers are not maintaining a high enough temperature to keep food products at 135 F or above. Manager was unsure how to adjust the temperature on the unit and stated that the digital thermostat is not working properly. Manager has requested service on the units.

    Observation:External thermomemters on the hot holding units that are not operating properly are not accurate and the internal thermometer only measures temperatures above 150 F.
  • Food storage containers identified with common name of food
    Observation:The following containers/bags of ingredients were not labeled as to contents in the kitchen: flour, cinnamon sugar, and dough mix. Some items were labeled during the inspection.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation:Test kit is not being used to check the sanitizer concentration when mixed in the 3 compartment sink.
