- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Observed raw animal products of different species stored in same container. Must not store different animal species in same container to prevent contamination.
- Roasts held at a temperature of 130°F or above
Prep cooler on line was temped @ 55*F, and condiment cooler by dishmachine was temped @ 50*F. All food was either discarded at time of inspection or moved to another location. No food may be stored in top section of prep cooler on line until unit can maintain 41*F or below. Condiment cooler by dish machine may not be used for storage of potentially hazardous food until unit can maintain 41*F or below.
- Common name-working containers
Chem bottles were not all labeled with common name of product. Must label all working containers with common name of product to allow for easy identification.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Most items are date marked, but some are stilll missing. Must date mark food when bringing out of freezer, preparing, or opening. Food then has 7 day shelf life counting day of prep, thawing, or opening as day one of seven.
- Stored frozen foods shall be maintained frozen
2 door freezer was temped @ 40*F. Food was moved to another freezer at time of inspection. Freezer must be able to keep food solidly frozen. May not use cooler to store frozen food until unit can keep food solidly frozen.
- Test kit provided and used to measure sanitizing solution concentration
Did not have both kinds of test strips. Front of house using chlorine at bar, and back of house using quat. Must get both kinds of strips for sanitizer of switch to one kind.
- Disclosure of menu items offered or served raw or undercooked
Consumer advisory identifys foods that are not allowed to be served undercooked or raw. When next menu update occurs contact the Health Dept for language that needs to be included.

Do not have most recent inspection report posted. Must post most recent inspection report in area viewable to public.

1) Pullout drawers have torn door gaskets. Must replace door gaskets to ensure adequate temp is maintained. 2) Slicer and 3 door freezer both have food buildup. Must keep clean to prevent buildup of bacteria.
- Storage and maintenance of wet and dry wiping cloths
Observed wiping cloths not maintained in sanitizer. Must keep wiping cloths in sanitizer when not in immediate use to prevent buildup of bacteria.
- Sanitization methods - hot water, chemical
Bar sanitizer was tested too low (10ppm) at time of inspection. Must maintain chlorine sanitizer between 50-100ppm for adequate sanitation. Corrected at time of inspection
- Bare hand contact with ready to eat foods
Observed employee handling ready to eat food with bare hands. Ready to eat food may not be touched with bare hands to prevent contamination. Food was remade during inspection.
