    Observation: Cardboard was being used to line shelves and cloth towels were being used to absorb moisture.
  • Food storage - preventing contamination from the premises
    Observation: Metal prep table in the kitchen and the walk in cooler racks (lowest shelves) are not at least 6 inches off the ground.
  • Warewashing equipment
    cleaning agents and wash solution temperatures
  • Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
    Observation: Pork chops (79*F) and pork steak (83*F) was observed above required minimum cooling temp. Food was discarded at time of inspection.
  • Handwashing signage
    Observation: Kitchen hand sink did not have a hand washing sign posted.
  • Plumbing
    materials, design, construction and installation
  • Backflow protection
    air gap, device standard, when required
  • Mechanical warewashing machine pressure measuring devices, data plate, internal baffles, and flow pressure device
    Observation: Dish machine did not have a pressure gauge installed.
  • Plumbing system maintained in good repair
    Observation: Hand sink in the assisted living serving kitchen had a leak.
