Observation: 1) Most racks in kitchen are either becoming rusty, or peeling. Racks must be repainted, or replaced to prevent contamination. REPEAT VIOLATION. 2)Shelving above 3 compartment sink have grease buildup. Clean as needed. 2) Heavy grease and food debris build up underneath large equipment in kitchen. Clean. REPEAT VIOLATION 3) Most equipment at cooking station are not clean to touch. Clean.

Observation: 1) A container of blue cheese 2) Several containers of deli meats not date marked in Pepsi reach-in cooler in kitchen. Must date mark all time/temp control safety food it not used within 24 hours after opendd or preparation. REPEAT VIOLATION

Observation: Employee beverage cup has no lid. Food employee must drink from a closed beverage container to prevent mouth to hand contamination.

Observation: Calk the wall behind hand sink in both employee restrooms to prevent smooth and easy cleanable surface.

Observation: Door gasket on reach-in freezer next to the dish machine room is torn. Replace as needed.
- Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
Observation: Two containers are holding cut melons in walk-in cooler #2 were exceeded 7 days from the date marked. All TCS food have 7 days from day marked to use or discard. Discarded during inspection. Corrected at time of inspection. REPEAT VIOLATION

Observation: Vents are dusty in #3 walk-in cooler. Clean off.

Observation: The thermometer in Pepsi reach-in cooler read 0*F degrees. The actual temperature was 36*F. The thermometer must be accurate to +/-3*F in the intended range of use.

Observation: Observed couple rubber spatulas are cracked. Replace. All utensils must be maintained in good condition.

Observation: Light bulbs at salad bar were not covered or shielded. Must provide shatter resistant bulbs in area where there is exposed food.
