    Observation:Glassboard wall panels are not sealed/caulked along the seams at the top and bottom.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation:There is no thermometer in the white refrigerator.

    Observation:The plastic cutlery are not stored with the handles out, to prevent contact with the food contact surface.

    Observation:The stand at Diamond #1 does not have an approved wastewater disposal system - the water drains onto the ground from an uncapped hose

    Self-closing, slow closing, or metering faucet shall provide a 15 second flow of water
  • Cleanability of floors, walls, and ceilings
    Observation:There is no mopboard/coving along the base of the walls to seal the opening between the walls and floors in storeroom, kitchen and restroom. Trim is not painted or otherwise made nonporous along the door to the kitchen. Walls by mopsink are plywood, not smooth/easily cleanable/nonporous.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation:There is no digital, instant-read food thermometer with thin-diameter probe to monitor cooking temperatures of the hot dogs.
  • Equipment location, installation, repair, and adjustment
    Observation:Sinks in kitchen are not caulked/sealed to the wall.
