    There is no consumer advisory on the dinner menu and foods served undercooked (walleye sandwich with home-made lemon dill mayo) are not identified with an asterisk that corresponds with a consumer advisory. There are no asterisks next to items served undercooked on the weekend breakfast menu ( poached eggs, two eggs) that corresponds to the consumer advisory at the bottom of the menu. Menus were changed after the previous inspection. Repeat violation.
  • Roasts held at a temperature of 130°F or above
    Observed 1 1/2 flats of shell eggs held at room temperature, for 2 1/2 hours. Removed to cooler, corrected.
  • Hand drying provided
    Observed no paper towels at wait station handsink by kitchen, and no paper towels or handsoap at Tap Room handsink - repeat violation.
  • Handwashing cleanser, availability

  • Bare hand contact with ready to eat foods
    Observed employee preparing parsley with bare hands, corrected.
  • Insect control devices are properly designed and installed
    Observed fly swatters in kitchen, which are unapproved fly control devices that allow insect parts to spread everywhere.
  • Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
    Observed two deep, tightly covered pans of hoagie meat prepared yesterday cooling in walk-in cooler, meats were 47 and 45 degrees. Discarded, corrected.
