  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observation:Observed cartons of raw eggs stored over beverages in store refrigerator - corrected on site.
  • PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
    Observation:Observed chicken and alfredo sauce reheating in crockpot - was 57 degrees after 15 minutes. Transferred to microwave to reheat to 165 degrees, corrected on site.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation:There is no digital, instant-read food thermometer with thin-diameter probe.
  • Frozen PHF/TCS foods are properly slacked and thawed
    Observation:Observed frozen spaghetti noodles thawing at room temperature - transferred to walk-in cooler, corrected on site.
  • Posting of a valid license
    Observation:The licenses are not visible to the public - there are other documents covering up the food licenses.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation:There is no thermometer in grocery cooler where lunchmeat and eggs are stored.
