Sanitizers Observation: Concentration of the quat sanitizer solution in the spray bottle for the kitchen tested high, >400 ppm. Solution mixing out of the quat dispenser is testing high also, >400 ppm. Person in charge diluted the quat solution to the correct concentration. A service call was also placed to EMS at time of inspection.

Physical facilities maintained clean: Cleaning frequency, restrictions, and methods Observation: Heavy dust debris build up on the hood vent filters in the kitchen.
Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing. Observation: Thermometers not available in all reach in food coolers in the kitchen and bar.

Established procedures for responding to vomiting and diarrheal events Observation: No verifiable Norovirus Bodily Fluids cleanup procedure available at time of inspection.
Ice used as exterior coolant not used as a food Observation: Mixers for bar drinks are stored in the consumption ice at the bar. Employee removed the mixers from the consumption ice.
Food temperature measuring devices are calibrated in accordance with the manufacturers specifications as necessary to ensure their accuracy Observation: Food probe thermometer used to check foods was not calibrated and accurate.
Frozen PHF/TCS foods are properly slacked and thawed Observation:Package of raw beef thawing in container of water. Manager moved thawing meat under cool running water.
In-use utensils, between-use storage Observation:Handles of ice scoops stored touching ice in the large ice machine and in the bar ice well. Manager removed and stored both scoops correctly.

Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours Observation: Slow cooked pizza sauce in the walk in cooler cooked and cooled yesterday still had an internal temperature of 47 degrees. Manager voluntarily discarded the meat sauce.
