- Reduced oxygen packaging conducted under a properly prepared HACCP plan, HACCP plan submitted to the Department, and records maintained and available to the regulatory authority
Observation: There is reduced oxygen packaged fish in the customer freezer. COS by removing.

Observation: There was raw chicken stored over raw beef and raw pork. COS by moving the chicken to a lower shelf.

- Food is properly labeled
Observation: Packaged foods produced and/or re-packaged onsite must have labeling information that includes the name and location of this facility, the common name of food packaged, a full list of ingredients in descending order of predominance by weight, net contents (oz. count or volume) and any cautionary statement related to allergens. Also observed no labels on food containers in walk-in cooler that were said to be marinade homemade mustard - corrected while onsite.
- Bare hand contact with ready to eat foods
Observation: Observed bare hand contact while cutting deli meat on slicer. Had a candid conversation about no bare hand contact with ready to eat foods.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: Observed no date-marking on prepared sandwiches in deli, chicken wings and turkey & dressing in walk-in cooler, cut melons and homemade packaged goods in retail reach-in cool. Today's inventory was corrected while onsite, however, a long-term corrective action plan is needed to ensure daily date-marking is completed.
