    Observation: Walls in the back storage area are not smooth and cleanable.

    Observation: Walls and floors near warewashing machine are soiled.
  • Storage of clean equipment and utensils
    Observation: Clean utensils stored in a soiled container. Utensils placed in the warewashing area to be recleaned and sanitized.
  • Cleaning frequency of food contact surfaces (PHF/TCS)
    Observation: Utensils in storage soiled with greasy residue. Utensils moved to warewashing machine to be recleaned and sanitized.
  • Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
    Observation: Meatloaf cooked on 8/11/15 in the walk in cooler with a temperature of 50.2*. Meatloaf discarded.
  • Storage of clean linens, single-service, and single use articles
    Observation: Single use items stored on the floor in the backroom.
  • Foods are cooled using appropriate methods
    Observation: Appropriate methods not used to cool meatloaf cooked on 8/11. Meatloaf discarded.
  • Using a handwashing sink- operation and maintenance
    Observation: Handsink behind front counter has a large bucket in it. Bucket removed from sink during inspection.
  • Cooling foods are stored properly
    Observation: Meatloaf cooked on 8/11 wrapped tightly in plastic wrap and aluminum foil. Meatloaf discarded.
  • Removing dead or trapped birds, insects, rodents, and other pests
    Observation: Large accumulation of dead insects in the light fixtures.
  • Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
    Observation: Hillbilly beans dated 8/4 and peach bourbon sauce dated 7/30 found in storage. Items discarded.
  • Warewashing equipment
    cleaning frequency, operation, use limitations, and clean solutions
  • Preventing contamination from equipment, utensils, and linens
    Observation: Cooked bacon stored on cardboard egg crates. Egg crates discarded and single use paper towels used.
  • Package integrity
    Observation: Several dented cans found in storage. Dented cans removed from storage and discarded.
