Observation: Food (potatoes in kitchen, soup in walk-in cooler) stored on floor.
- Foods are cooled using appropriate methods
Observation: Food (cooked ground beef) are not cooled properly. Initial temperature 130F cooled to 112F in 90 minutes. Food not stored in shallow container during cooling process. Person In Charge moved shallow pans to more quickly cool food.
- Sanitization methods - hot water, chemical
Observation: Sanitizer (chlorine in bar area, quat in kitchen areas) not at proper concentration. Containers were emptied and new solutions were placed in containers.
- Handwashing sinks-Numbers, capacities, location, and placement
Observation: Handwashing sinks (east kitchen half wall contains blender container, northwest kitchen sink contains soiled utensils, bar area contains containers) are not accessible. Person In Charge removed items restricting use of handwashing sinks.
