    Observation: Sausage patties held on kitchen make table held at temperature near 50*F due to over filling container. Corrected by moving excess sausages to alternate refrigeration.

    Observation: Smoked chicken, mashed potatoes, and mac & cheese held at temperatures ranging between 108*F and 125*F. Corrected by moving to alternate hot holding.
  • Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
    Observation: Food items such as fried chicken, ribs, gravy, and shredded beef in kitchen walk-in refrigerator not below 41*F after more than 6 hours of cooling. Corrected by disposing.
  • Customer self service operations are monitored by food employees

  • Packaged foods shall comply with standard of identity requirements
    Observation: Two varieties of jalapeno "jam" sold in retail grocery section.
  • Handwashing sink equipped to provide water at a temperature of at least 100° F through a mixing valve or combination faucet.
    Observation: No hot water supplied to hand washing sink in meat and Chinese departments.
  • Food on display is protected from contamination by consumers
    Observation: No covering provided for self service chips in grocery area.
