    Observation: Drips still observed coming from the bottom of the back flow preventor device downstairs and collecting in a large bucket. Per owner the part to fix the leak will be in this week. Owner is working with JP Mechanical and will produce an invoice showing part being changed. Leak must be repaired.

    Observation: Dish washers observed handling dirty dishes then handling clean dishes without first washing their hands. Person in charge discussed violation with employee and dishes were re-washed. Employees washed their hands. More training will be given by management.

    Observation: Observed a container of RAID pest spray in the back kitchen on wall shelf. Discarded.

    Observation: Paint chipping from the ceiling in the back kitchen above the deep freezer.

    Observation: Alu Chhat(56F), Chili garlic sauce(49F) ice bathed on the buffet were not maintaining proper cold holding temperatures. Ice was not being maintained at a sufficient amount to keep foods cold. Employee discarded the food items.

    Observation: Debris build-up on floor under prep tables in front kitchen. Oil and dust build-up in vent hood of front kitchen.

    Observation: Dates missing on prepared food items in the walk in cooler and in the two reach in coolers in the front kitchen. Employee date marked the food items correctly.

    Observation: Floors under the steel prep tables in the front kitchen need to be cleaned of debris and dead roaches. Wall and floor behind the fryer in the front kitchen needs to be cleaned of debris build up.

    Observation: Observed heavy rust build up on a cheese grader in the back kitchen. Employee discarded the grader.

    Observation: No chlorine sanitizer bucket set up at time of inspection. Employee mixed up a new solution at the correct concentration of 50-100ppm.

    Observation: Cooks were not wearing any kind of hair restraint while preparing food.

    Observation: No chlorine sanitizer solution set up at time of inspection while food was being prepared. Staff set up a chlorine sanitizer solution between 50-100 ppm.

    Observation: Heavy grease and debris build up on the walls and floors by the large front kitchen fryer. Debris build up on floors under the three compartment sink and kitchen equipment.

    Observation: Blue wiping cloths were stored on counter tops and not in sanitizer solution while in use.

    Observation: Individual pre-packaged /wrapped raw goat meat(57F), (58F), (61F) set in a tub on the floor was not maintained at 41F or below. Employee stated the meats had been set out frozen last night and thawed at room temperature. All meat discarded. Cut cantaloupe(48F) and potato salad Alu Chhat(47F) on the buffet ice bath were not maintained at 41F or below. Food was recently placed on the buffet. More ice was added to bring temperature down. Par fried, battered potato slices(68F) left on the kitchen counter were not maintaining 41F or below. Employee had brought them out an hour earlier and placed them back into the cooler.

    Observed standing 2-door refrigeration unit contained product on the middle and bottom shelf between the temperatures of 44-45*F at the front kitchen. Person in charge discarded items that had been stored in the unit overnight and placed items that were set out during lunch service in the walk in cooler. Person in charge called maintenance to service unit on this day.

    Observed vent covering in the back kitchen missing on the top corner above dry ingredients. Observed container of water catching leaking ceiling dripping at the upstairs dry storage. Observed walls int he back kitchen were soiled with food residue under the ventilation hood.
