    Observation: Debris build up on the kitchen food slicer blade area. Slicer was not used today. Cleaned and sanitized.

    Observation: Employee preparing fresh pasta was not wearing any kind of hair restraint. Person in charge discussed the violation with employee.
  • When to wash
    Observation: Employee washing dishes was observed handling dirty items then without washing their hands putting away clean items. Inspector discussed violation with the person in charge. Person in charge discussed the violation with the employee who then washed their hands before handling clean dish wares.

    Observation: Shellstock tags are not being duplicated and/or kept with all batches of food product. Employee in the process of cooking shellstock.

    Observation: Employee handling food did not have hair restraint. Person In Charge had employee put on hat.
  • Using a handwashing sink- operation and maintenance
    Observation: Pasta maker parts soaking in container within the handwashing sink. Person In Charge removed the container in sink. Person In Charge is changing the sink to a food service sink.

    Observation: At time of inspection, handwashing sink in kitchen was out of disposable towels. Employee refilled disposal towels.

    Observation: Containers of prepared food (garbonzo beans, cooked octopus) were not labeled with date. Discussed issue with Person In Charge and he stated that they will date all prepared foods.

    Observation: Cleaning chemicals stored above clean utensils and food containers above warewashing machine.

    Observation: Thermometer in kitchen prep reach-in cooler broken. Person In Charge replaced thermometer.

    Observation: Employee handling food had rubberbands on wrist. Employee removed rubberbands.

    Observation: Ice dumped in hand washing sink basin by the grill. Pasta maker parts soaking in a pan set in hand washing sink basin by the ice machine. All items removed. Hand sinks are for hand washing only. Use the three compartment sink to discarded and store items.

    Observation: Observed damaged food utensils that were broken and chipping. PIC discarded the utensils.
