  • Food temperature measuring devices are provided and readily accessible
    Observation:need probe style thermometer for checking food temperatures
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation:All reach in coolers must have visible accurate thermometers in them
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation:Firm has installed a 3comp sink, owner stated they will use bleach as sanitizer, test strips were available-out of bleach at time of inspection

    Observation:several vinyl tiles have come loose in kitchen-new box of tiles available-owner stated they will be replaced

    Observation:Shell eggs stored on shelf at room temperature, must be stored in cooler at 41F or below
  • Food shall be obtained from sources that comply with law
    Observation:Shell eggs for sell without label from source, eggs must come from an approved source with egg handlers license and proper label on container. Reach in cooler has plastic container with non sealed foil top and no label, this product is not from an approved source and cannot be sold at this location. Baked goods in display case must have label from an approved source.
