Observation: ice cream mix is holding above 41 degrees and was removed and disposed of and machine will be repaired and monitored. rice was cooked yesterday and cooled but taken out of refrigeration early and is therefore at 60 degrees. should be held at 41 or below and reheated from that point.--thrown out and new was made.

Observation: no sanitizer present in dishwasher. Will repalace with new bucket and test b4 dishes are done. purchased test strips.
