Observation: Frozen small sausages stored in the plastic bags with lots of crystallized ice inside with not date mark after opening. Manager was unsure of the date and discarded voluntarily. Corrected.

Observation: Employee has been storing cooked food (RTE) from the warmer on the wooden table next to handsink that has no splash-guard and food has been exposed contamination.

Observation: Facility was not sanitizing lunch tables after service. Using only a soapy water solution to clean tables. Must use a food grade sanitizer to sanitize all lunch tables after each shift.

Mash potatoes on serving line were temping between123.2-127.5 degrees. All potentially hazardous food must be hot held at 135 degrees or higher. All other foods on line temped above 135 degrees. Potatoes were placed in oven for reheat. CORRECTED.

Mop water continues to be disposed of in kitchen drain next to 3 tank sink. A curbed cleaning facility equipped with floor drain must be provided and conveniently located for the cleaning of mops and disposal of mop water and similar liquid waste. Use provided mop sink or install a more conveniently located mop sink.

Thermometers are stored with the probe piercing the foil package of alcohol wipes. Once the probe is sanitized it must be stored to prevent contamination. Discontinue practice of piercing the package and instead open package and use wipes as the outside of the package maybe contaminated.
- Food storage containers identified with common name of food
Bowls of various items for baking bread were measured and wrapped for use tomorrow. When items such as flour, sugar, dried milk, and salt are removed from original container they must be labeled. Labeled during inspection. CORRECTED.
