Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours Observed two large plastic pans of Turkey Bunwich in walk-in cooler at 57* after 3.5 hours. You have 4 hours to cool from 70* to 41*. Broken down into shallow stainless steel pans and placed in freezer for correction.
PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding Hamburger gravy only reheated to 125* for hot holding. Reheated to 165* for correction.
