Observation: Bare hand contact with bread. Corrected by putting gloves on.

Observation: Wiping towels not held in sanitizer solution. Corrected by placing the towels in sanitizer solution.

Observation: Foods in the walk-in cooler are not date marked. Corrected.

Observation: Ham held at room temperature temped at 49 degrees. Corrected by placing the ham in to cooler and replacing it with cold ham and keeping it cold on ice.
- Mechanical warewashing equipment, hot water sanitizing temperatures
Observation: The plate dishmachine hot water temp is not hot enough. The temperature gauge is reading 180 degrees but the test strip is not changing. Corrected by using the other dishmachine in the kitchen.
