Observation: Quat sanitizer was over 400ppm. Maintain at 200ppm. Using 10 second test strips. Ensure test strips are held in sanitizer solution for 10 seconds to get most accurate reading. Corrected on site.

Observation: Raw grounds beef in pan stored above juice boxes in walk-in cooler. Must store raw meat below any ready-to-eat foods to prevent cross-contamination. Corrected with education.

Plastic storage bag of open ham and shredded cheese did not have a date mark. Must date mark potentially hazardous food products if not used within 24 hours after opening from package. USe withni 7 days of date mark.
