Observation: Can of "Metered insecticide spray" was found at bar area. The can is not approved for use in food service establishments. Can was discarded during inspection.

Observation: Cutting board on prep cooler is grooved and soiled.

Observation: Flooring in walk in cooler in basement is peeling up and bent. Floor is no longer cleanable.

Observation:Does not have sanitizer for wiping cloth made up, must keep sanitizer container whenever using kitchen. Made up now with quat sanitizer.

Observation:Reusing cardboard to hold bags of cheese in cooler, must provide a container that is smooth, cleanable and nonabsorbent. Cardboard should not be reused for any product than the original product.

Observation:Must post handwashing signage at all handsink, ie RR's. given examples.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation:Clean shelving racks in walk in keg cooler, getting rusty, may need to replace soon if no longer cleanable.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Observation:Has one container or raw pork on top shelf over other ready to eat foods, moved to lowest shelf with other raw animal products now.

Observation:License in binder, must post within public view.

Observation:Dishmachine registering at 149 degrees F for rinse cycle, at plate level, temp adjusted and now at 166 degrees F. Monitor closely to ensure is reaching proper temp at plate level
- Cleaning procedure
Observation:Using sprayer hose to rinse hands, must use handsink when washing hands.
- Outer openings are protected
Observation:Gaps around exterior doors where light showing through, must seal to prevent pests from entering.
