Protecting food from environmental contamination Observation: Rice was being stored under a prep table. The unit was moved so it would not be cross contaminated with other products.
Established procedures for responding to vomiting and diarrheal events Observation: The facility did not have a diarrhea vomit clean up procedure on hand. I provided a noro clean up document and the facility stated she would copy it and place it into protocol.
Air drying of equipment and utensils Observation: Plastic containers were not air dried by the three hole sink.
The ability to explain the responsibility of the person in charge for preventing the transmission of foodborne disease by a food employee who has a disease or medical condition that may cause foodborne disease. Observation: The facility did not have a sick policy in place. I provided them with one and the PIC stated she would make sure everyone signed the policy.
Wiping cloths properly air dried Observation: Common towels were being left out of sanitizer buckets after each use. The units were placed back into sanitizer.
