Observation:Grease trap is clogged - after using the dishwashing machine wastewater from the trap overflowed from the grease trap lid and is on the floor in a large area, to in front of the basement stairs. The water heater valve was replaced with a garden hose spray valve, still leaks around the seal.

Observation:Observed roast pork and dumplings at room temperature at the steam table, observed egg roll filling, crab rangoon and meats at room temperature throughout the kitchen. Corrected on site.

Observation:Observed several large containers blocking access to kitchen handsink and a bowl and plastic bags in the handsink - corrected on site.

- Rodent bait stations
Observation:Observed unapproved open rodent bait in basement, discarded, corrected on site.

Observation:Dishwashing machine had no detectable level of sanitizer, container was removed, pump was primed, corrected on site.
- License required to operate a food establishment
Observation:Owner has operated the business as the new owner since January 1, before the license application was approved and entered into the database and before the establishment was inspected.
- Food temperature measuring devices are accurate to ±1°C or ±2°F in the intended range of use
Observation:There was a food thermometer in the grill prep cooler instead of a refrigerator thermometer, temperature showed 38 degrees but actual air temperature was 46 degrees.
- Safe, unadulterated, honestly presented
Observation:Observed cooked fried chicken and pork in re-used cardboard containers that originally had raw chicken in them. 4 boxes of meats were voluntarily discarded due to cross-contamination. Corrected on site.
- In-use utensils, between-use storage
Observation:Observed scoop for rice inside standing water instead of in water 135 degrees or below or dry on a plate.

Observation:Grill prep cooler was operating at 46 degrees, food temperatures were 45 degrees. Owner turned the thermostat down. Also observed meats held at room temperature and not planned to be cooked for another hour and a half - removed to walk-in cooler, corrected on site.

Observation:Working containers of flour, salt and other ingredients were not labeled with the contents of the containers.
