Observation: One wet mop was laying against the wall. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, EQUIPMENT, or supplies. Employee educated and verbalized understanding. CORRECTED ON SITE.

Doing a good job of date marking, but found a package of pepperoni opened and not date marked. Any RTE/PHF must be date marked on day opened, thawed or prepped and used within 7 days, then discard (unless used within 24hr).
