  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation:Hot dog cooker steamer is not working at time of visit. The unit had been turned on at 10:00, however at 11:30, food was only at 83F. Taken out of service and hot dogs were discarded.
  • Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
    Observation:Fuzzy particles hanging around ventilation over front line prep area. Cleaning is not occurring frequently enough to stay ahead of build up. Detail cleaning needed in this kitchen.
  • Cleaning frequency of food contact surfaces (PHF/TCS)
    Observation:Meachanical dishwashing detergent was empty. Food contact surfaces were not being cleaned properly, this was corrected at time of visit. Frequency of cleaning on prep cooler seals is not being done often enough to prevent food build up and mold growth.
  • In-use utensils, between-use storage
    Observation:hot dog tongs soiled and sitting at room temp. per staff- usually these are left out all day. Get procedures in place that meet code requirements for safety.

  • Duties of PIC
    Leader had an uncovered bandage on finger while working with manual dishwashing and food related activities. Finger cots were not available at time of visit. Bandage should be covered with a water tight barrier such as a finger cot or glove. If infected then cover bandage with finger cot and don a glove.
