Observation:Cleaning is needed under kitchen equipment, the wall in back of the dish machine. The floor in the back storage area needs cleaning.

Observation:Several cloth towels laying on and under counters in the prep area and in the dish area in the store room. Some are wet, some are dry.

Observation:Single serve carry out containers are stored on the floor in the prep/storage area.

Observation:No hand washing sign at the hand sink in the bar.

Observation:Date mark product left over for 24 hours. Several products are not marked in the walk in, etc.

Food is stored on the floor in both the walk in freezer. The hobart mixer shield gurard has food debri and has not been cleaned properly. Glasses are stored on a dirty linen by the hand sink. The knife rack holder is very dirty and is not being cleaned as needed.
- Indoor and outdoor surfaces
The floors in the prep area, storage area, and walk in cooler need cleaning. The finish is coming off the walk in freezer floor. The floors are very dirty under all equipment to include the dish machine. The wall needs cleaning under and around the dish machine area. The vents and ceiling tile need cleaning in the prep area. I would recommend purchasing a steam cleaner and or power washer to maintain the prep area.
