  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation:Hot dog roller holding brat at 92 degrees F (reheated to over 165 degrees F now, and two wrapped meat items at 90 degrees, discarded. Unit tends to turn self off, must monitor closely and work order will be submitted, new machine and may be malfunctioning. Does keep temp log and was at proper temp 2 hours ago.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation:Has bulk (12-24 count) meat items opened and not date marked for 7 days, must date mark and use within 7 days, unless use entire package is ised in first 24 hours.
  • Mechanical warewashing equipment, hot water sanitizing temperatures
    Observation:Dishmachine is not operating properly, hose has been ordered. Must cease any food service that requires warewashing, ie cookie trays, other items are clean in place.
  • Sanitization methods - hot water, chemical
    Observation:Spray quat sanitizer at 400 ppm, diluted to 200 ppm now, test with strips to check concentraion.
  • Outer openings are protected
    Observation:Back door has light showing through edges, must seal to prevent pests from entering.
  • Separation from food, equipment, utensils, linens, and single service
    Observation:1)In retail area, has chemicals stored over food service products, rearranged to have chemicals stored below these items. 2)In dry storage area has stainless steel spray stored over food service gloves, moved chemical to separte area now. Both corrected on site.
  • Storage or display of food in contact with water or ice
    Observation:Retail area, Nestle ice cream chest has thick build up of ice, needs to be defrosted to protect the ice cream products.
  • Posting inspection reports
    Observation:Has inspection from several years ago posted, must post most recent inpection within public view.
