Observation: Bottom of bread oven, grill and floors not clean to sight or touch.

Observation: Floor in poor repair. Paint chipping on ceiling in customer area.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation: Sanitizer in bucket tested above 200ppm. Inspector and employee diluted the solution to 50-100ppm. Dish machine sanitizer concentration tested below 50ppm. Owner called Ecolab during inspection for maintenance. Employees are using 3 hole sink for sanitizing the dishes until the concentration level is adjusted to 50-100ppm.
