    Observation: Lettuce, cheese, and tomatoes were not being held on ice or in a cold holding unit to maintain 41 degrees. Potentially hazardous foods must be maintained at 41 degrees or less during service to prevent bacteria growth.
  • Storage or display of food in contact with water or ice
    Observation:Food under condensing unit in walkin freezer was covered with ice due to faulty drainage of the unit. Packaged foods may not be stored in direct contact with ice or water.
  • Miscellaneous sources of contamination
    Observation: Salad bar was being used for self service and was being used from both sides even though there was only a sneeze guard on one side. All food must be protected from contamination by the customer and its environment.
  • Equipment location, installation, repair, and adjustment
    Observation:Condensing unit in walk in freezer is not draining properly and is causing ice build up on food stored below. All equipment shall be kept in good repair and proper working order.

    Observation: Food was observed being stored on the floor of walk in freezer. Food must be stored 6 inches off the floor in order to prevent contamination from the premises.

    Observation: Large dough mixers continue to have dried dough build-up. If not in use, clean and remove from kitchen area. REPEAT VIOLATION.

    Observation: Condenser drain line in walk-in freezer continues to have ice build-up. Repair line (seal around penetrations, use heat tape and insulate) to prevent ice contaminating food stored below it. REPEAT VIOLATION.

    Observation: the 2 middle sink in women's restroom near kitchen have the hot water lines shut off. Must provide at least 100 degree water for proper hand washing. Repair.

    Observation: Thermometer for wash temperature on dish machine is broken. Facility has a service order for new part.

    1) Several food boxes stored on floor in walk-in cooler. 2) Rack in walk-in cooler is less thn 6 inches off the floor. REPRAT VIOLATION. All food and food items must be stored at least 6 inches off the floor for food protection and easy cleaning.

    Dented black bean can. Must discard can that are dented on the top/bottom seams or on the black line seal. CORRECTED ON SITE.
