    Observation:Need to seal the wooden shelves under the liquor bottle storage in dry storage area and reseal the worn wood shelving under the bar area.

    Observation:Has plans to install culinary food prep sink in salad area, must be done within next 30 days. Will need indirect connection to sewer.

    Observation:Reusing misc. cardboard for storage of food items, such as single use dipping sauces, individual portions of mushrooms, food storage bags, and misc cooking food equipment, provide a container that is smooth, cleanable, and nonabsorbent for this purpose. 2)Has cloth sheet over meat slicers, provide a nonaborbent material for this purpose, such as a food grade plastic bag. 3)Has liquor bottles stored on shelving that is not sealed, seal with at least two coats of light colored paint or varnish to aid cleaning.

    Observation:Broken handle of ice scoop, happened recently, must replace to protect ice from hand contact when scooping.

    Observation:Using round bowl to scoop flour, must use a utensil with handle and keep inverted out of product.

    Observation:Has leaking at faucet in mop sink, repair.

    Observation:Has cans of bug spray not approved for use in restaurant, obtain approved chemicals from food supplier.

    Observation:If continue to use side prep table with no refrigeration, must provide written procedure to follow for keeping temp controlled foods at least 70 degrees F or less and held at four hours or less. May get insulated cambro for this purpose as well.

    Observation:Thermometer needed for the cooler in vault room, holding eggs.

    Observation:Using a bucket to collect condensate from the walk in, provide another means to dispose of. 2)Using bucket to dispose of returned beverage ice, etc provide a garnish tray and direct to floor drain in the area.

    Observation:Has homestyle Kenmore refrigerator holding cheeses, must provide a commercial grade cooler for temperature controlled foods.

    Observation:1) Ice machine has buildup on chute edge, clean and sanitize. 2) Can opener and meat slicer have dried food particles, clean.

    Observation:1)Has spray bottles of cleaner on prep tables, must move to area not adjacent to or over foods, kitchen and salad prep area. 2)Has chemicals stored over freezer in vault room, move to area below food storage areas.

    Observation:1)Has six burner stove with no hood ventilation or fire suppression system near warewashing area, plans to remove unit. 2)Unable to detect mechanical ventilation in either RR, must provide mechanical ventilation to combat odors.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation:True cooler holding tomatoes at 43 degrees and chicken at 46 degrees, must be at 41 degrees or less. Will discard temp controlled foods now. Adjusting temp lower now, service to be called if not holding proper temp.
  • Equipment location, installation, repair, and adjustment
    Observation:1)Has been using three compartment sink for food prep usage, must now provide a designated food prep sink with indirect connection to sewer, within next 1 month. 2)Has wooden lid on flour working container, must provide a lid that is smooth, cleanable, and nonabsorbent for this purpose. 2)Has foil on shelf in reach in cooler under squeeze bottles, must change daily or provide ie a tray to hold the items. 3) TRuGold chest freezer has molding that is missing along front edge and two holes in lid with small area of insulation exposed, no longer a cleanable surface, repair or replace unit.
  • Light bulbs, protective shielding
    Observation:1)Has several coolers/freezers that have glass bulbs that are not protected from shattering, provide a cover or shatter resistant bulbs, ie vault room freezers, beer upright cooler. 2)Several ceiling lights not coated or have cover, ie liquor closet in vault room, outside storage rooms by side entrance.
