Observation: Missing a thermometer in walk-in cooler. Must provide a thermometer to ensure adequate temp is maintained.

Observation: Both pop machines have mold buildup on nozzles. Must clean more frequently to prevent contamination.

Observation: Single service cups were stored on the floor. Food must be 6" off the floor to prevent contamination and cleaning purposes. Corrected at time of inspection.

Observation: Food debris buildup in the following area: 1)walk-in freezer floor, 2)floor underneath large equipment in kitchen. Clean as needed.

Observation: 1)Backflow prevention device on mop sink leaks 2) Faucet on food prep sink next to walk-in cooler leaks. Must repair or replace to maintain in good condition.

- Material characteristics of non-food contact surfaces
1) Cabinet by drive up window has the laminet falling of exposing particle board. All surface exposed to food and food items must be cleanable and nonabosorbent. Suggest replacing cabinet with stainless steel shelving. 2) Reach-in portion of make table cooler is non functioning and cooler door is duct taped on. Walk-in cooler is missing a part on bottom of door and allowing light to shine through. All equipment must be maintained in accordance with manufacturer requirements. Make repairs as needed. Remove duct tape. 3)The following area must be cleaned, oil pooling on inside of fryer, wall behind the hot cabinets has food splashes, the side of make table on drive-up side, and pop back splash inkitchen.
- Roasts held at a temperature of 130°F or above
Walk-in cooler holding pico between 42.3 - 44.6 degrees and cilantro sauce at 42 degrees. All potentially hazardous foods must be maintained at 41 degrees or lower. Service called during inspection. If cooler is unable to maintain PHF under 41 degrees it can not be used.
