  • Commercially processed, Ready to eat foods reheated to 135°F of above for hot holding within 2 hours
    Observation: Marinara was being reheated in a soup kettle (60*F). Kettle was not designed for reheating and may not be used for that purpose. Marinara must be reheated to 135*F in no more than 2 hours. Marinara was reheated at time of inspection.
  • Cleanability of floors, walls, and ceilings
    Observation: Cove base in the bakery area is broken. Tiles on both corners of the oven and proofer (brick wall) must be replaced.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation: Beverage area (cafeteria area) had some syrup from a beverage container spilled in cabinets and underneath. Beverage area was cleaned up during inspection. Also the milk racks in the retail dairy cooler are soiled and must be cleaned.

    Observation: Marinara in soup kettle was temped @ 60*F. Ready to eat food must be maintained at 135*F. Marinara was reheated at time of inspection.

    Observation: Waco boxes in storage areas are made of cardboard. Boxes must be replaced with a material that is smooth, easily cleanable, and non absorbent.

    Observation: Ice machine in the bakery area had dust buildup. Must keep clean to prevent buildup of bacteria and contamination.
  • Safe, unadulterated, honestly presented
    Observation: Container of french onion dip was found in the retail cooler with food soil on it. Package was discarded at time of inspection. May not sell any adulterated food.
  • Equipment location, installation, repair, and adjustment
    Observation: Door gaskets in the retail area are torn and must be replaced. Must check the retail freezers for tears in door gaskets. Also some of the milk racks in the retail cooler are broken and must be replaced.

    1) Front wire gate on produce cooler/display has become rusty. Must replace or resurface wire gate to prevent contamination. 2) Waco boxes in dry storage are cardboard. May not use cardboard to prevent buildup of bacteria and contamination. Must replace with material that meets all above criteria. 3) Shelves in dry storage are bare wood. Must paint or seal with at least two coats of light colored paint or varnish to provide a smooth, easily cleanable, and nonabsorbent surface.

    Observed ready to eat bacon that was dated 8/17 and to be discarded 9/1. Hold time (16 days) was given by Pizza Hut per contract. Bacon may not be held for longer than 7 days after opening to prevent buildup of bacteria. Facility has contacted Pizza Hut for documentation of food safety test (water activity or pH) to determine if bacon can be held for longer than 7 days. Pizza Hut states that they have not conducted a test or have documentation, so Target will modify procedure. Corrected at time of inspection

    Observed raw animal products (pork sausage links and patties) stored above ready to eat foods (kielbasa). Must adequately separate raw animal products from ready to eat foods by storing raw products below ready to eat foods. Corrected at time of inspection
