Hand sink was blocked by coffee lids and other food items. Hand sink must be maintained for hand washing at all times. Items moved during inspection. CORRECTED.
- In-use utensils, between-use storage
Storing ice scoop on top of machine. Utensils must be stored on a cleanable surface. Ice scoop holderto be installed.
- Drying mops
Mop was stting in bucket. In between uses mops must be stored so they can air dry without soiling walls or equipment. CORRECTED.
- Roasts held at a temperature of 130°F or above
Carlos O'Kelly holding tem on ice in cambros. Diced tomatoes were temped at 47.8 degrees and sour cream at 48.1 degrees. All potentially hazardous foods must be maintained at 41 degrees or less. Mechanically refrigeration is requred. Cooler from an unopened stand brought to stand E and items placed in cooler.
