Observation: Cooking temperature and reheating temperature knowledge is lacking. Toxic material storage throughout establishment. Printed out cooking and reheating temperature charts for future reference. Chemicals moved at time of inspection.

Observation: Paint, air freshener, and chafing fuel stored over food and dishware throughout establishment. Chemicals were moved to locations away from food.

Observation: Test kit for checking chlorine sanitizer concentration not available.

Observation: Deli slicer in the upstairs kitchen is soiled. Slicer was taken apart and placed in the three compartment sink.
- Hand drying provided
Observation: Hand drying provided at the handsink in the bar is a cloth rag changed daily. Described the importance of using a clean towel for each handwashing and disposable towels were placed at the bar handsink.
- Light bulbs, protective shielding
Observation: Light fixtures in the storage areas upstairs are not shielded.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: Reach in coolers storing perishable foods not equipped with ambient temperature thermometers.
- Food temperature measuring devices are calibrated in accordance with the manufacturers specifications as necessary to ensure their accuracy
Observation: Food thermometers not calibrated, with one thermometer being off 10 degrees and the other off 28 degrees. Calibration performed at time of inspection and PIC was trained on how to properly calibrate thermometers.
