Observation: clean utensils were stored with food contact surface up, should be handles up to prevent contamination when dispensing

Observation: back storage room is not a good place for storage of food (freezers and coolers) because the roof and walls are in need of repair. It is very dirty and dusty in this area too.

- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: thermometers needed in make table and walkin cooler today
- Outer openings are protected
Observation: back store room has a lot of light showing around the door and around the roof area which needs to be sealed up to keep insects and rodents out since food is stored back here (freezers)

Observation: ice machine needs cleaning-mold observed inside today

thawing should be done in fridge and not at room temperature
